Alongside the stainless-steel tanks in our brewery stands a majestic, 3500-Litre American Oak foeder. Like an oversized wooden barrel, this aging tank lets the contents evolve slowly over time as the oak expands and contracts with the seasons. We never fully empty this vessel, instead refilling it every time we remove a portion. The result is a golden, dry beer that is constantly changing but always enchanting.
