Our first two batches brewed at 40 Simcoe Street were fermented with a classic Belgian saison yeast before being transferred to our American oak foeder for long-term aging. When the time was right, we loaded this beer with passionfruit, which contributed a delightful acidity and balanced tannins from the oak with a ripe tropical zing.
